1: To a large skillet, simmer chicken broth, spinach, and garlic until spinach shrinks. 2: In a large bowl, add laughing cow wedges and spinach mixture. Mix thoroughly. 3: Cut salmon into 3 even filets and slice pockets into the top of the fillets. 4: Add filling mixture into each salmon pocket. 5: Bake at 325°F for 20 minutes. 6: Pair broccoli and divide evenly 3 ways. 7: Serve and enjoy!
